Gustu, which means "flavor" in Quechua, is one of the best restaurants in South America. The setting is superb, with an open kitchen where you can see the artists concocting their recipes like works of art. All the dishes are made exclusively with Bolivian products from local agriculture. Superb wine and cocktail list. Some people love it, others criticize the cuisine for being more arrogant than gastronomic. Whatever the case, it is a unique experience in La Paz. We let you make your own opinion!

EXCELLENT à ne pas rater
C’est un restaurant chic devenu célèbre pour son originalité.
On peut y déguster une variété d’une dizaine de plats concoctés avec des produits régionaux et présentés avec goût comme des assiettes de la cuisine moderne.
Fleurs d’hibiscus, cœur de palmier à la vinaigrette de banane, œufs d perdrix (koloni) manioc au fromage cuit au beurre de coca et de la moelle (cuñape), ceviche de lézard écrasé aux fleurs d’hibiscus et échalottes. algues cachuro avec graines et crême d’amande (huacasaya), filet de truite aux fruits de la passion et piment jaune, lama à la plancha ave sayuce galcée et tubercules des Andes (p.de terre, feuilles de quinoa) - Glace au parfum de rose et whisky bolivien et cendre de chêne. Eau à volonté.
Il faut compter de 80 à 100 Bs (soit 14 € environ) + une éventuelle boisson. La bouteille de vin revient aussi à une centaine d’euros.
