This is a project by the famous Mexican chef Enrique Olvera (New York, Mexico, Oaxaca), who stands out from the others to abandon ancestral traditions (corn) and refocus on cuisine inspired by Southeast Asia (Japan, Thailand) and Peru. But the cuisine respects the aromas and borders do not matter. Here we find a simplicity of ingredients that will delight the most demanding and sophisticated palates.
