The chef Poncho Cadena offers the most modern cuisine through a detailed menu that lists dishes such as octopus with coriander cream, clam chowder with chili butter, fish of the day and of course, oysters. The latter will be opened by a waiter assigned to this Herculean task who will also offer you lemon, mignonette, and other divine sauces.
