The oldest factory in the village where you can see steam ovens used to cook agave hearts for tequila.
It is the oldest factory in the village, that of the Jose Cuervo brand (house founded in 1758): it is probably here that you are offered the most complete and professional visits. In this factory that has retained its copper stills, each day 50 000 litres of tequila of the most emblematic brands of the group are produced, transforming 110 tonnes of agave. Let these figures not scare you: the place remains intimate in these historic buildings, and visiste is agéables. The steam kilns can be used to cook the cœurs hearts for 38 hours and then their cooling zone. The mill allows to squeeze and extract juice, which will be fermented for 60 hours. A first distillation gives us a nectar of 25 degrees, which at its second distillation will result at 55 degrees (first tasting). We then visit the warehouse where tequilas are resting in oak barrels: Blanco from 10 to 22 days, reposado from 2 to 11 months, añejo from 1 to 3 years old and extra añejo between 3 and 10 years (second tasting). Then we descend into the beautiful cellar where the emblematic tequila of the brand (third tasting) is preserved before it is diluted when it is bottled (the tequila cannot legally exceed 40 degrees). The visit ended with an umpteenth tasting to detect the flavours of different types of tequila. Good courage to find the exit.
