Founded in 1954, this bakery, which still uses a stone oven, has made a specialty of coyotas, small wheat cakes and panelas(piloncillo) typical of the region. They are now also made with a variety of ingredients such as almonds, walnuts, coconut, dates, etc. The other speciality is of course the huge and very thin tortillas de harina. The shop also sells regional cheeses and machaca (dried meat to be browned in a decoction of tomatoes and condiments).
