It is owned by Chef Charlie Collins, a figure in Panamanian gastronomy and author of T'ACH, a book on indigenous Panamanian cuisine that won the "Best in the World Culinary Heritage Cookbook Awards" in May 2018. In a warm and elegant setting, around the fireplace, you can enjoy modern Panamanian cuisine with international and indigenous flavors, made with local ingredients and products.
