On the port, this immense hangar shelters tens of small canteens drawing a "U" around the central part of the room which is used as refectory. Here cooks are busy preparing all the traditional dishes of the Trinidadian popular cuisine. You can choose your dish by asking a few questions about a particular preparation and judging its appearance more or less appetizing. It is possible to buy a plate of meat or fish from one of the cooks and take your vegetables and drinks from another.
