This is where you'll taste one of Singapore's finest lacquered ducks. Called Peking-style Peking duck, the recipe actually comes from the Yangzou region of China. The bird is prepared in two courses. The skin is cut off before your very eyes and served with pancakes. The duck is partially sliced. The remaining meat is returned to the kitchen to be cooked according to your preference, with noodles or rice. The setting, all black lacquer, is resolutely elegant.
