For about forty years, Jacqueline Dalais, the grande dame of Mauritian gastronomy, has been cooking French cuisine that speaks Creole. Her brigade receives guests in the refined setting of a residential residence well known to the island's fine gourmets. The menu is full of fish and shellfish, meat and game, great classics of French cuisine, and gives pride of place to recipes from the past and to the reference dishes that have made and continue to make the success of the house, such as sea urchin cappuccino and cassava mouillettes.
