The old Calima has now migrated to the Puente Romano hotel but still remains by Daniel García, doubly Michelin-star for this last restaurant, and now simply displays the name. This is still an address limited to special occasions, except if you opt for the tapas formula, which is more «accessible». The decor is still sumptuous, with open kitchens and views of the gardens. On the plate side, the kitchen is representative of the nueva cocina andaluza, both avant-garde but at the service of traditional recipes. A test: egg without egg, green tomatoes to basil, peas and pouce, kebab of tuna stew, ravioli of Iberian pig tails to shrimps, pop-corn of litchi and roses… art, with a large A.
