Also known as "El ingenio", this Renaissance-style building dates back to the 16th century. It was partly built with materials from the former Arab castle, and the façade features paintings with geometric motifs. It is currently the Nuestra Señora del Carmen cane syrup factory, the only traditional factory still operating in Europe. Located at the entrance to the village, this building will be the first stop on your tour before you begin the beautiful climbs up to the highest parts of the village.
