LA TINAJA
Since we're in Guadix, we might as well dine in a restaurant set in a cave, and to do so we'll head for the heights to the north, beyond the railroad station. Specializing in grilled meats since 1998, the small brasserie has grown to become a benchmark in its field, offering top-quality, wood-grilled meats. In 2016, it was awarded the Prix National de la Gastronomie. Today, it is run by Mario Pérez, a fervent defender of km0 cuisine. To savor the large planks of beautifully-sized grilled meats, you can sit down in one of the restaurant's many nooks and crannies. Small appetites should be avoided, but for the rest of us, pleasure is guaranteed. Reservations are recommended if you're staying for the weekend.
