SALMOREJERIA UMAMI
A tactical well situated on the road between the Judería and the plaza de las Tendillas, this "new" concept makes sense! From the name of the 5 th "tasty" flavor discovered in Japan, this Salmorejeria, hear a place where one prepares salmorejo (to make simple: a kind of thicker gaspacho!), can boast of presenting à la carte more than 30 varieties of nectar. In a neat, white, green and blue space, since spring 2012, Chef Juan José, having made his classes in various luxury hotels, such as the very select Palacio Palacio del Luxury in the Hospes chain, is taking on the traditional regional recipes and inventing others, served in baked land on large washers of olive wood. From an immutable base with bread, tomatoes, organic garlic and vegetables and good regional olive oils, the young artist, adding a multitude of ingredients (truffles, caviar, mushroom, wasabi…), deploys a beautiful range combining tradition and originality with even a few desserts (including the 3 D served with coloured movie glasses, history to change perception). In addition to suggestions of the day (fresh ravioli) and more consistent dishes (some of the Iberian black pig Base), the selection of Andalusian wines reserves some wonders. Some preparations are more impressive on paper than on the palate, but in a few months Spring has become a safe value for the Tripadvisor website, with its compilations of international notices. It is a good place to stay, but it is a must for the day!
