Espaviote produces medieval drinks called Hypocras des Pays d'Oc. It is the largest producer in France.
This has been the hypocras capital since 1989. Today, with over 80,000 bottles a year, it is the largest producer in France, and even exports abroad. Some thirty years ago, Patrick Rouvière developed a strange beverage and registered the brand name. Today, his son Loïc runs L'Espaviote, which is sold by over five hundred retailers in museums and châteaux throughout France.
