Delicious seasonal steamed cuisine by David Bouley in a superb Japanese restaurant in Manhattan.
The kingdom of steam. Here, the focus is on Mushimono, dishes steamed in a casserole dish. The tasting menu, made up of eight dishes (different according to the season) and served on a large tray decorated with flowers and candles, is as much a pleasure for the eyes as for the taste buds. The decor is absolutely magnificent. All the walls are covered in bamboo, and the pale yellow lighting has obviously been worked on. A real success story for the highly publicized American chef David Bouley.
