PERLE D'ORTIGIA
This restaurant in the heart of the Ortigia peninsula defines itself as an evolving table of tradition, a Syracuse "pearl" that would be a shame not to try. In other words: here, Sicilian flavors are sublimated by a nouvelle cuisine-style savoir-faire that incorporates exotic ingredients, all served in a beautiful vaulted stone room, bright during the day and subdued in the evening (no terrace). For the main course, we loved the rack of lamb with pistachio crust and almond milk, smoked onions and cranberry sauce.
