Located in the heart of Japantown, this ramen house is famous and crowded, so remember to make reservations for evenings and weekends. The star of the menu is the Hinodeya Ramen, a noodles soup with bonito (tuna), kombu and scallops. You can also add pork cha-shu, soft-boiled eggs, dried seaweed and green onions. Vegetarian ramen is also popular, with soya milk, sesame and spinach noodles, a creamy soup that can be topped with a cake of tofu, pepper, fried kale and shiitake mushroom. Try it out!

The dashi-based ramen broth is interesting, but doesn't actually taste very good. The noodles here are also pretty chewy and thick for my tastes. Maybe I just prefer hakata-style ramen, but Hinodeya was sadly disappointing for me across the multiple times I tried it.

Good experience but not the best ramen in town.

I got the house ramen, too many green onions and the pork was overcooked. We had takoyaki for the table and it was good.

The employees were really nice, the restaurant was clean with a cool atmosphere and the bathrooms were nice with the bidet toilets.

Let me start by saying the ramen taste good, and if you're looking for spicy ramen, this is the place. I got the infinity spice level, and boy howdy was that spicy. I probably drank more water than I ate in ramen. The cook also gave me some of the spice to take home, I'll be keeping it on hand for the next allergy season.

However, I am not a fan of paying before receiving service. A tip was expected at the beginning of the meal. After receiving my ramen I had to go and get additional water myself and was pretty much ignored until I went in to request a to go box. The ramen itself was cold, which was a bit disappointing considering it was already a bit chilly outside and I was hoping the ramen might warm me up a bit. At least they didn't lie about the spice, for it certainly had the heat on that front.

I’ve tried Hinodeya Ramen (house) - that was first ramen which I’ve actually liked in my entire life.
Also tried house sake - very good.
Staff is very friendly, place is nice in good neighborhood.
