Located in the heart of Japantown, this ramen house is famous and crowded, so remember to make reservations for evenings and weekends. The star of the menu is the Hinodeya Ramen, a noodles soup with bonito (tuna), kombu and scallops. You can also add pork cha-shu, soft-boiled eggs, dried seaweed and green onions. Vegetarian ramen is also popular, with soya milk, sesame and spinach noodles, a creamy soup that can be topped with a cake of tofu, pepper, fried kale and shiitake mushroom. Try it out!

Loved ordering at the table and being given lots of options for customizing my ramen (including subbing out pork for chicken). The spicy miso at level 1 wasn’t that spicy (for a non-tolerate spicy food eater) and even my partner’s level 3 was reasonable. They had 2 vegan options, which was amazing, and they let you sub out for gluten free noodles. The kale on the vegan ramen was fried (such a delicious touch) and the overload of green onions was amazing.
Love the crunchy bits (fried garlic, onion and chili oil) at the table and the bidet in the bathroom! Service was quick, friendly and impressive. Extra star because the Japanese style Muzak Top 40’s Hits was awesome, too.
As someone who’s been to Japan and gets ramen in almost every major city I ever visit, this is super delicious authentic ramen. I used to go back to Ramen-Ya every time I was back in town but this is my new fav.
