The Robuchon Group's chic bistro opened in Madrid in 2022 and is delighting local regulars. Housed in the emblematic Embassy, once a den of political spies, it brings to life the late chef's visionary culinary legacy, in a bistronomic version here, with excellent pasta alle vongole or salmon spinach with wasabi sauce. Robuchon's emblematic recipes are thus adapted to an affordable, well-crafted menu, while local produce is given pride of place. It's also a great place to sip a cocktail.
