Since 1906, La Carbonara has been an institution in Rome, for its eponymous pasta of course, which locals and tourists alike devour with large rolls on tightly packed tables where the privacy of conversation is only respected if your neighbors don't speak your language. A canteen atmosphere, with words and photos of visitors lining the walls, reasonable prices and hearty, tasty Roman dishes. Of course, the first thing you'll try is a real carbonara. And on Thursdays in Rome, it's traditional to succumb to gnocchi !
