One of Peru's favorite local cuisines is chifa, the Peruvian Chinese cuisine that introduced the wok and stir-fry. Often inexpensive and fast, chifa has earned its letters of nobility with addresses like this one, where fusion is taken to the extreme. The menu and price range are extensive, but it's ideal to share starters (dim sum, min pao, spring rolls) followed by one or two generous dishes such as chaufa rice with langoustines and filet mignon, or crispy chi jau kai chicken feet .
