This chic address, located inside Cusco's no less prestigious Palacio Nazarenas, recently opened under the watchful eye of Pia Leon, partner and right-hand woman of Virgilio Martinez, chef at Central in Lima and Mil in Moray. In keeping with a creative, uncluttered style of cooking that highlights local produce, Mauca offers dishes based on kiwicha, quinoa, tubers or giant corn, trout, alpaca... all sublimated so that the flavours explode in their simplicity. Creative, contemporary, unadorned and very successful.
