With its large Moroccan community, the capital of Europe is not overflowing with good restaurants that convincingly reflect the true richness of Moroccan gastronomy. Yet this cuisine is worthy of the greatest interest, and we'd like to be able to sit down more often to a series of specialties that are well worth the detour. It was with this in mind that a young graduate in economics from ULB, but originally from Fez, decided that there was surely an audience out there likely to appreciate an offer along these lines.
With parents who had already collaborated on such establishments as "L'Etoile de Fez" and "Les Splendeurs du Maroc", our man was not exactly a novice in the hotel and catering industry. With his university education behind him, he had begun his career in consultancy, only to come to the conclusion that he would do best in a restaurant project combined with a caterer offering the cuisine of his roots.
And so, on December 29, the doors of "Nomade" opened in Uccle, a concept as pretty to the eye as it is likely to delight gourmets.
Indeed, it's easy on the eye, as the setting imagined by the owner is as elegant as it is warm, in shades of orange and brown, with touches of materials mostly sourced from the other side of the Mediterranean, without falling into the low-level souk atmosphere all too often found in this kind of establishment.
This is likely to be a gourmet's delight, as the kitchen is run by a chef who, until recently, was also responsible for the success of the "Warrakech" restaurant in Waterloo. His expertise is evident as soon as you open the door to Le Nomade, as the first thing you see when you enter is the impressive refrigerated counter displaying a series of specialties designed to be taken away. In perfect harmony, the chef's ambition is to present a mosaic of traditional preparations, with a modern twist
In every respect, here you'll find everything you need to appreciate Moroccan cuisine and create a gourmet feast at home, worthy of the best riads... Being able to benefit from the takeaway services of such a house is a godsend, because while Lebanese, Italian and Asian caterers abound in Brussels, genuine Moroccan caterers are extremely rare.
However, to fully appreciate the cuisine of Le Nomade, the best option is to sit down in the beautiful dining room, which is as welcoming as it is well-spaced. And, as my companion and I had the opportunity to do on Thursday, to peruse the house's beautiful menu, which is not short of tempting suggestions.
J’ai choisi une pastilla et un couscous royal, et chaque bouchée était un pur délice. Les saveurs étaient riches et bien équilibrées, les épices subtilement dosées, et les portions généreuses. Pour finir en beauté, le thé à la menthe accompagné de cornes de gazelle était parfait.
Le service était irréprochable : souriant, attentif et toujours prêt à expliquer les plats ou raconter des anecdotes sur la culture marocaine.
Une adresse que je recommande sans hésitation pour tous ceux qui souhaitent découvrir ou redécouvrir les saveurs du Maroc. Je reviendrai avec plaisir !
