Another fine hotel restaurant! At the helm of Le 1040 is Gabriele Petrucci, who took over the kitchen from Top Chef finalist Jean-Philippe Watteyne. The Belgian accent reigns (both in the dishes and in the provenance of products) in this elegant bistronomic brasserie: zucchini carpaccio in escabeche, quail in Liège syrup... but the menu also takes detours into Italy (tiramisu revisited with speculoos), due to the chef's origins. Aromatic plants used in cooking grow on the roof of the hotel.
