If you find Régis in a quiet moment in his bakery (which is quite rare) and ask him about his approach, chances are you'll be as passionate about him as he is. To make his breads and baguettes, he uses ancient (even antique), organic cereals, leaven (liquid or solid, depending on how you want the crumb), salt and basta! This is how you get the taste of real bread. In addition, you will find pastries and "cravings of the day". If you're lucky, you'll find some flan pie and that's heaven!
