BRASSERIE CANTILLON
The dashing century-old brewery has never changed hands, the current "boss" being Paul Cantillon's great-grandson. The beers are produced using no additives of any kind, the famous spontaneous fermentation and are certified organic. This is a legendary brewery, celebrated as far afield as the USA and considered in over twenty countries as a benchmark for spontaneous fermentation, and hence for traditional lambic and gueuze. Jean-Pierre Van Roy, now retired, assists his son Jean, who has taken the helm, and Florian, his grandson.
