A locavore before her time, Maca de Castro has been scouring the island for the best ingredients for as long as she can remember: the Port Sóller market for caproig (endemic rock fish), the port of Alcúdia for seafood, Lloseta for its mare's milk, her own vegetable orchard in Sa Pobla....
