Under the guidance of Michelin-starred chef Julián Mármol, local products are processed using high-precision techniques from Japan, in the elegant, contemporary setting of a service room open to the four winds. The man interprets and modulates, plays with traditions, flavors and textures, and the result is stunning. Admittedly, it's not cheap, but the experience is worth it. Don't forget to book in season!
