In 1989, a Swiss doctor had the idea of opening a French-style "bistro" in the heart of the paço imperial, a pleasant place steeped in history. Three decades later, the bistro has become an institution, offering simple, high-quality cuisine. With its cantine decor, it serves fine salads and excellent quiches. At lunchtime on weekdays, it is frequented by the dynamic young executives of Rio's business district - as well as by the staff of the French Consulate, whose offices are next door to the Bistro.
