As Minas Gerais regulars will have gathered, chef Ricardo Martins offers a fusion of the delicacy and spice of Thai cuisine with the richness of regional Minas Gerais cuisine. Uai is in fact an interjection referring to the Mineira culture and expressing surprise. Uaithai is indeed a pleasant surprise.
