The chef has built his menu and his culinary identity on the idea of highlighting forgotten or outdated dishes by revisiting them gastronomically and aesthetically in a more contemporary way. An absolute success. It must be said that Ales lovingly cultivates his small vegetable garden full of aromatic herbs. The result is striking on the plate, just the names of the dishes will make your mouth water: roasted figs with prosciutto, raw asparagus with parmesan cream or a mouth-watering chestnut mousse. Just one piece of advice: enjoy yourself!
