Spirulina is gradually making a name for itself as a superfood, rich in vitamins, proteins, minerals and fatty acids. In Auvergne, Amandine Soyez's farm, set up in 2016 in Lapeyrouse, is dedicated to the production of this blue micro-algae, which proliferates in warm, brackish and shallow waters in inter-tropical regions. From the 420m2 of greenhouse ponds, the spirulina is pressed and dried. It is sold at the production site, which is open to the public, as well as in a number of markets, stores and online.
