You thought you knew all Auvergne cheeses? Have you tasted the delights of Ferme des Roziers? In 2019, Adeline Allègre becomes a partner in the GAEC. In the laboratory, she develops her dairy products from organic milk: fresh products, such as fromage battu and faisselle, and lactic products, such as tomette, cendré and gaperounet. The garlic and shallots used in some cheeses come from neighboring producers. "We take the product from the animal to the consumer," explains Adeline. It's "from field to plate"!
