Think you know all Auvergne cheeses? Have you tried the specialities of Ferme des Roziers? In 2019, Adeline Allègre joins the GAEC. In her laboratory, she creates dairy products from organic milk: fromage frais, such as fromage battu and faisselle, or lactic cheeses, such as tomette, cendré and gaperounet. The garlic and shallots used in some cheeses come from neighboring producers. "We take the product from the animal to the consumer," explains Adeline. It's truly 'field to plate'!
