Not far from the Basilica of Saint-Amable, Raphaël Martin delights us with croque-monsieur revisited in an elongated shape, for easier eating. Available in savory, sweet or even salad versions, his creative and generous recipes are offered à la carte or in formulas. Everything is homemade from scratch, using local produce: bread and brioche from Loubeyrat, vegetables from Limagne, potatoes and smoked trout from the Brayaud region, not forgetting the inevitably local Auvergne cheeses, as well as meats and charcuterie. Yummy!
