In the heart of the historic city of Riom, Raphaël Martin delights us with croque-monsieur revisited in an elongated form to be eaten more easily, in a savory or sweet version, or even in a salad. On their own or in formulas, their recipes are creative and generous. Everything is homemade, from scratch, with local products: breads and brioche from Loubeyrat, vegetables from the Limagne plain, potatoes and smoked trout from the Brayaud region, without forgetting the local cheeses from Auvergne, as well as the meats and charcuterie. Yummy!
