BRASSERIE 1893
In the heart of the famous Waldorf Astoria, in the centre of a magnificent open kitchen, chef Addison Liew shares with you his love of cooking between East and West. As one might expect, the service is under the microscope and the dishes follow one another at a frenetic pace. The black of the hats and costumes combined with the white of the tablecloths give the whole a very solemn look. And the food, of course, is not to be outdone. Between fresh products (French blue lobster) and flagship products (truffles or foie gras), everyone should find something to enjoy, especially since the combination of wines is subtle (only as part of the tasting menu).
