Established since 2016 in an alleyway in Happy Valley, Proof is well known to locals and is renowned as one of the best bakeries on the island. Warning: this reputation is well-deserved! Breads and baguettes are made by hand using sourdough. On the viennoiserie side, you'll find the classic croissants and pains au chocolat, executed to perfection, as well as more original items such as the chocolate babka with orange zest, the lemon scone and the apple cinnamon croissant. An address well worth the detour.
