As an appetizer, delicately placed on a real Limoges porcelain, a bold crème brûlée with basil and its gougère with parmesan cheese and Provence herbs, which surprises and bewitches
Followed by a sweet starter that leads us to the sea, the smoked salmon mousse with mascarpone and pink berries on a pecan, dill and coconut biscuit, and sprinkled with pistachios and Espelette pepper... it's fresh and perfectly balanced!
In resistance a drizzle of lean "corvina reina" emulsion with sparkling wine, ginger, saffron and Sichuan pepper and its zucchini risotto
For the final bouquet we have the "Magnificent" revisited by Patricia, subtle and crunchy meringue on a whipped cream of blueberries, with chocolate crunch and almond chips bathed in a rose syrup
