A vast natural fishpond, Lake El Biban is a paradise for the fish that come here to reproduce. Fishing in Zarzis is a real spectacle, using age-old techniques: as soon as a shoal ofouzaff, a highly prized dwarf fish, is spotted, the catchers start beating the water with flippers to push it towards the opening of the kiss, a fine net skilfully pulled taut. Salted, then sun-dried, theouzaff is stored in amphorae and preserved for winter consumption. The market begins at Place de l'Horloge, where the minaret rises.
