The Idoate brothers prepare contemporary dishes inspired by traditional Navarrese recipes and seasonal produce, whose work has been awarded a Michelin star. Despite the somewhat stilted appearance of the room, the service is very pleasant and relaxed. Some suggestions: combination of tataki and tartar with red tuna, sesame oil and wasabi emulsion; wild sole roasted in walnut wood; lamb's feet stewed; grilled fillet of beef with foie gras, roasted manioc and grape sauce... Spectacular presentation. Splendid desserts.
