The Robertson Wine Valley is creating a new trendy trend that will delight those who enjoy the good things: sparkling wine. Paul René Mcc brut sparkling wine is made from 100% Chardonnay grapes, picked by hand early in the morning and then refrigerated overnight. Case by case, they are passed through the press before the whole berries are crushed. This is only the beginning of a 3-year journey of careful planning and attention to create a vintage. Each bottle is fermented for at least 20 months on lees, which creates a vibrant foam, a freshness of apricot and green apple, with an emphatic and persistent dry finish. Made from classic bubble varieties (75% pinot noir and 25% chardonnay), each bottle of Paul René Mcc brut rosé was fermented for 24 months on lees at a constant temperature of 14°C before disgorging. The result: a sparkling wine slightly salmony, a refreshing style and appearance with red and fruity aromas, floral nuances and a silky richness. All you have to do is taste it!
