Bougainville is the restaurant of Amsterdam's superlative Hotel 27, located at the same number on Dam Square. We come here first and foremost for the magical, baroque setting. We're greeted by a superb photo of David Bowie and draped, gilded fabrics. The restaurant is a showcase for Tim Goldsteijn, a young Michelin-starred chef. The setting is sumptuous, yet intimate (only 45 seats). The menu is, of course, a delightful journey featuring exceptional products (wagyu meat, Dutch mutton). Bougainville, for a waking dream.
