Proust’s madeleine is no longer the only speciality of Cabourg. The Coque de Cabourg is now a treat for gourmets. It was a Cabourgeais, Eric Rolland, a passionate fisherman on foot and especially passionate about cockles, who came up with the idea of making the pretty shell the other emblem of the seaside resort. The illusion is bluffing! It was not long before our hulls ended up in a stewpot with a little garlic and white wine! Take a bite. A praline texture reveals itself in the mouth. Declined in three Norman notes (caramel, teurgoule, fleur de sel), this cockle is a little jewel.
