Easy to find in the medina, the small Hotel Molino only reveals its charm once you've stepped through the door. The place is surprising, completely carved out of the stone, with pretty grottoes inviting you to curl up around the fire in winter. Behind lies a magnificent, lush garden. The five rooms are all different, under the rafters and overlooking the Ras el Ma mountain, they are cosy and traditional. A restaurant serving organic Mediterranean cuisine is planned, with a terrace ideally located under the vines.
