On the south bank of the river, about a 15-minute walk from the center (2 km), you can visit the Capel cooperative, which produces the famous pisco of the same name. You'll follow the entire process of production, fermentation and distillation, and visit a small pisco museum. The cooperative brings together some 1,200 local producers, producing some 10,000 cases of 6 to 12 bottles a day. For those accustomed to small-scale, artisanal production, the scale of the operation is impressive. This is, as one might say, " big artillery".
