While the walls are light, the chairs pine and the lights emanating from the chandeliers soft, it's on the plate and in the glass that the colors explode! At Burdock, we meet chef and owner Andrea Carlson, who opened this small restaurant in May 2013 with a single idea: produce that feeds the soul, and wine that reveals it. Supported by Matthew Sherlock, their highly selective, very French and very natural wine menu is unique in Vancouver (Vouette and Sorbée champagne, Bernard Baudry in Chinon, Domaine du Tue-Boeuf in Touraine...). It's magical!
