Brett & Sauvage is the brainchild of Francis Joncas, best known for co-founding the Pit Caribou microbrewery. However, the spirit of brewing is completely different here, with the place devoted entirely to spontaneous fermentation. The yeasts and lactic acid bacteria naturally present in the air seed the wort as it cools in the "coolship", before the beers and ciders are aged in oak barrels for one to three years. The result: exceptional products to be enjoyed without moderation!
