Inspired by the new Nordic cuisine movement, a concept that comes to us from Scandinavia, the menu "expresses purity, freshness, simplicity and ethics" associated with the terroir of the Far North: game, fish, garnishes, etc., as well as regional products in tune with the seasons and harvesting. Vegetarians are also catered for, with at least one tasty option. Also worth a visit: Épicerie Québécoise - Chez Boulay, where local flavours are celebrated in every corner of the store (42 côte du Palais).

Le personnel est vraiment très accueillant et de très bons conseils concernant le choix des vins. Une belle découverte des vins canadiens et de la tisane locale le "Thé du Labrador" (infusion relaxante, aide à la digestion, est utilisée également dans certains cocktails). Les mets sont délicieux ( le chef s'inspire de la cuisine norvégienne). A tester absolument.
