ALBACORE
A member of the family that unites the restaurants L'Affaire est Ketchup, Kraken Cru and Patente et Machin, l'Albacore focuses on seafood and seasonal vegetables, but not only. The menu is of course evolving, but always impeccable: swordfish tataki in a pepper and thyme crust with peach salad, roasted parsnip and pistachios with miso and Chardonnay vinaigrette, and creamy parsnip purée, or sea sausage and escabeche with yuzu beurre blanc, marinated mussels and clams, corn salsa, horseradish, mushrooms and Israeli couscous.
