He obtains the meat from an association of producers dedicated to animal welfare and sustainable animal husbandry. The hamburgers are grilled with lava charcoal and seasoned only with salt and pepper, directly on the grill to get the best flavour from the beef. What applies to hamburgers continues with side dishes and sauces: everything from fries and ketchup to more refined sauces is prepared in the restaurant.
