In search of a lost time, this gourmet restaurant offers a unique concept as chef Niklas Ekstedt and his team use neither electricity nor gas in the cooking process. The food is cooked over an open fire with birch wood, reminiscent of the traditional, slow, rustic cuisine of the Jämtland forests. By placing himself at the antipodes of molecular gastronomy and futuristic processes, the chef participates in the emergence of a new Swedish cuisine proud of its history, which we have seen emerge over the last ten years.
